There has been an increasing tendency in recent years for the producers of glucose and sugar to add value to their source of fermentable carbohydrate, by converting it into a chemical such as citric acid. For example, the citric acid industry, which started with pharmaceutical companies such as Miles and Pfizer, is now dominated by the agri-giants, such as ADM, Cargill and Tate & Lyle. Cheap raw material is now the critical factor in profitable citric acid manufacture and it may therefore be of interest to starch and glucose producers to have an up-to-date understanding of the citric acid business. Another important consideration in the citric acid business is the rapidly expanding Chinese capacity (as with so many other chemicals).
